Who can be a witness in the home insurance release form?

I live in a condo, downstairs unit. Recently, the ceiling of my bathroom was damaged due to a plumbing issue of the upstairs unit. Luckily, the damage will be covered by the insurance company of the resident upstairs, and I do not need to pay anything out-of-pocket.
Today, I received a release form from the insurance company, requesting my signature and also signature of a “witness to signature”.
In this case, who can be a witness? Can I pick any of my friends?
